Orange cake with honey glaze. A delicious decadent easy to make cake which looks awesome. The freshness of the orange flavoured cake with the glaze of honey sure makes you feel heavenly .this cake was over with in minutes after i served it to all. Having oranges in season now ,every one should give this cake a try. The day i tried this cake my beloved best buddy Gazeenasulu kunahmed also tried the same cake and posted the picture. Umm great people think alike. I have another confession to make about all the pictures i post. 99 percent of them are taken placed on the top of my dish washer.(Even this picture is taken on the top of my dish washer)this dish washer of mine has been with me for nearly 11 years. Not once have i used it till date but i am making maximum use taking pictures placing the food items cooked by me.

Ingredients

oranges 4
orange zest grated of 2 oranges
almonds100 grams powdered
butter ( room temperature ) 200 grams + to grease
baking powder 1 teaspoon
brown sugar200 grams
self raising flour 200 grams
Honey6 tablespoons + to serve

Method

  1. Preheat oven to 180 degree Celsius . Peel the oranges and cut them into 1 1/2 inch thick pieces .
  2. Deseed the pieces . Grease a 23 centimetre round cake tin . Pour the honey on the base and arrange the good looking orange slices on top.
  3. Chop the rest if you have any . Mix all the other ingredients together along with the chopped oranges and beat together with an electric beater on low speed till well combined and smooth .
  4. Pour this batter mix over the orange slices evenly and make a make a deep hollow in the Center of the mix with the back of a spoon .
  5. This helps the cake to rise evenly . Bake for 50 to 55 minutes until firm or a tooth pick inserted in the Center comes out clean .
  6. Remove and cool down completely and then turn over in deserved plate .
  7. Serve with honey poured on top to give an e extra glaze to the cake .
  8. Serve with honey and cursturd . Honey itself was good enough .

Cupcakes with raspberry icing . This is my first try on cupcakes. I felt ok but have to better myself for sure. My daughter ANISHA is into cup cakes now a days .So for her sake atleast i have to update myself in cupcakes. My last stay in coimbatore , she craved so much for cup cakes . Finally found one small shop where they sell cup cakes.She got a few but have to say they were way too expensive and didn’t taste good or appear good. My gal was all praises about my friend gazeena sulu kunahmed and her cup cakes. Sulus cup cakes look so beautiful that we will not want to eat them. (meaning just admiring them will be worth) Uum ok happy republic day to all. I am a real patriotic person. But i feel our patriotism stops with schools and colleges. Have to mention about my experience in my last visit to a movie theatre in fun republic mall in Coimbatore. Before the movie could start they played a musical and visual of our national anthem asking everyone to stand up. I was so surprised but had goose bumps.

Ingredients for cupcakes

Ingredients for Icing

rasburry jam2 tablespoons

Method for cupcakes

  1. Preheat oven to 180 degree Celsius ( 350 degree Fahrenheit ) . Line muffin cups with paper lines .
  2. Beat butter and sugar with an electric beater till fluffy . Add eggs one at time beating well along with the vanilla essence finally .
  3. Mix flour , baking powder and salt a pinch ( if useing unsalted butter ) together .
  4. Alternatively add flour and milk in three additions with the mixer on low speed , beginning and ending with flour .
  5. Fill the muffin cups with the mixed batter to 3/4 and bake for 20 minutes or until cooked through .
  6. Check by inserting a tooth prick in the Center of cupcake and it comes out clean , it’s set and cooked . Remove and cool .

Method for Icing

  1. Beat butter and icing together till fluffy and smooth . Mix in the rasburry jam ( purée the jam if thick ) .
  2. Pipe the icing with diffrent nozzels on the muffins . Serve at room temperature .
  3. Make sure the cupcakes are cooled down completely or else the icing starts to melt . ( I piped the icing when the cupcake was warm with excitement but it all melted , dum me )

Chocolate Brownie Fudge

A yummy dessert so rich in chocolate . It has a very thin cracked hard crust and a fudgey base .it needs no sauce or anything to accompany it , can be had just like as it is . If you want to make it look even more appealing serve it with venilla ice Cream or any berries made this a few days back just like that no guests or kids at home . My hubby had just 2 slices , the rest ………. Ok I myself gobbled the rest .( not all at once ) I had the nigella lawson moment where you are drawn to sneak towards your refrigerator to have a sinfull indulgence . When I eat I just enjoy the moment but afterwards feel so bad about eating . Wonder why I am not able to change this one thing in me .

Ingredients
Butter melted – 1/2 cup , eggs – 2 beaten , cocoa powder – 1/3 cup , baking powder – 1/4 teaspoon , sugar – 1 cup , flour – 1/2 cup , vanilla essence – 1 teaspoon , salt – 1/4 teaspoon , chopped nuts – 1/2 cup ( I used peacan nuts , can use cashewnuts , almonds , walnuts or pistachio ) chocolate chips – 1/2 cup ( I used Cadbury milk chocolate chopped )  

Method ;
Preheat oven to 160 degree Celsius . Grease a 9 inch square baking pan . I usually when ever baking a cake prefer to cover the base and sides ( a bit higher than the sides of the baking tray as it will be easier to life the cake once done ) with foil paper or butter sheet . Then grease . Mix sugar , melted butter and vanilla essence together and mix well . Add the beaten eggs . Mix well till the sugar dissolves . Sift together baking powder , flour , salt and cocoa powder three times . Gradually add it to the egg mixture . Mix till it is nicely incorporated and well blended . Fold in the chocolate chips and nuts . Spread the batter in the greased baking pan . Bake for 30 to 40 minutes . Remove and cool completely . Cut into squares and serve .  


Marble Cake

Easy to make yummy cake . The two colours in the cake really tempts you to have more . I serve it with chocolate sauce topping . Can serve warm , chill or at room temperature .

Ingredients for the Cake

Ingredients for Chocolate topping

Method
Mix maida and baking powder together. Beat butter and sugar till light . Add the egg yolks one by one , beating well after each addition . Add vanilla essence and beat well . Fold in maida , alternately with milk . Beat egg whites to soft peaks . Fold into the maida mixture . Divide the mixed mixture into 2 equal parts . Mix in cocoa powder to one part . Preheat oven to 180degree Celsius . Grease a baking mould . Place alternative spoonfuls of vanilla and chocolate mixtures in it . Swirl with a fork . Bake the cake for 40 to 45 minutes until done . Cool completely . Pour chocolate topping over and serve .

Chocolate topping ; cut chocolate into small pieces . Place cream and cut chocolate in a microwave safe bowl . Cook on medium for 2 minutes , stirring often till chocolate has melted . Stir in honey . Cool to thick stiff pouring consistency . Pour on the cake and serve .


Eggless Chocolate Cakes

Egg less chocolate cake with rich chocolate topping . My daughter loves cakes . I am a moderate cook when it comes to cakes . My best friend sulu is an expert in cakes n bakes . That’s why may be I am never confident enough . I made this cake for my gal Anisha . It turned out well ( I had my fingers crossed till I got good comments ) .

Ingredients
 Flour – 1 1/2 cups , cocoa powder – 3 table spoons , baking powder – 1 tea spoon , salt – 1/4 tea spoon , brown sugar – 1 cup , oil – 5 table spoons , vinegar – 1 tea spoon , cold water – 1 cup , oil – 1 tea spoon to grease . Ingredients for rich chocolate topping : dark chocolate – 100 gm , cream – 75 gm , honey – 3 table spoon  

Method

Mix flour , cocoa powder , baking powder and salt together . Seive this mixture twice . Add brown sugar and mix well . Mix oil 5 table spoons , vinegar and water together . Pour this mix over the dry mixture and beat for 5 minutes . Grease a baking pan with 1 tea spoon oil . Bake the cake in a pre heated oven at 185 degree centigrade for about 30 minutes Till cooked through . Check by poking a long tooth pick into the Center of cake . If it comes out clean without anything sticking its cooked . Cool completely and coat rich chocolate topping all over the cake . Decorate as u like and serve .

Cut chocolate into small pieces . Place the cream in a microwave safe bowl . Add the chocolate pieces . Cook on medium for 2 minutes , stirring often till chocolate has melted . Stir in the honey . Cool it to thick of stiff pouring consistency . Apply and coat all around the cake and serve . ( u can do the same by double boiling in case u don’t have a microwave .)


Ruby Jewel Cookie

She learnt this dish from a cooking class she attended during her holidays . really great that teenagers like her r into cooking as cooking is a great art . I have not yet tried this recipe yet but wanted to share it As the recipe is so simple and easy . Looks good to . Thanks Zenofer .

Ingredients

Egg yolk – 2 , sugar- 2/3 cup , vanilla essence – 1 tea spoon , butter – 1 cup , flour – 2 1/4 cup , mixed fruit jam or any fruit preserve – 1/3 cup .

Method
Mix flour and sugar , keep aside . Add butter to the flour little by little , till it resembles crumbs . Whip egg yolk and vanilla essence and mix to the above and roll into a dough . Cover and chill for an hour . Knead into small balls , flatten gently and make a slight impression in the Center with your thumb . Place in a greased baking tray and bake in a preheated oven at 180 degree Celsius for 15 minutes . Cool , top with jam in the Center and serve .
